The Magic of Lazy Man Cobbler
The “magic” happens in the oven. You simply melt butter in the baking dish, pour a simple batter over it, and then spoon fruit on top. As it bakes, the batter rises through the fruit, creating a tender cake on top with a saucy fruit layer beneath.

This recipe uses canned peaches for ultimate convenience, but see the variations for using fresh or frozen!

Ingredients
· ½ cup (1 stick / 113g) unsalted butter
· 1 cup (125g) all-purpose flour
· 1 cup (200g) granulated sugar, divided
· 1 tablespoon baking powder
· ¼ teaspoon salt
· 1 cup (240ml) milk (whole milk is best)
· 1 teaspoon vanilla extract (optional, but recommended)
· 1 (29 oz) can of peaches in syrup or juice, undrained
· ½ – 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat and Melt Butter: Preheat your oven to 350°F (175°C). Place the stick of butter in an 8×8 inch or a 9×9 inch baking dish. Put the dish in the oven as it preheats to melt the butter. Keep a close eye on it so it doesn’t burn! Remove the dish as soon as the butter is melted.
- Make the Batter: In a medium bowl, whisk together the flour, ¾ cup of the sugar, baking powder, and salt. Pour in the milk and vanilla extract (if using) and whisk until you have a smooth, lump-free batter.
- Assemble the Cobbler (The Lazy Way!):
· Pour the batter directly over the melted butter in the baking dish. DO NOT STIR.
· Spoon the undrained peaches and their syrup evenly over the top of the batter. DO NOT STIR.
· Sprinkle the remaining ¼ cup of sugar (and the cinnamon, if using) over the peaches. - Bake: Place the dish in the preheated oven and bake for 35-45 minutes, or until the top is golden brown and the edges are bubbling.
- Cool and Serve: Let the cobbler cool for at least 15-20 minutes before serving. It will be extremely hot! It thickens up as it cools.
Tips for the Perfect Lazy Cobbler
· Don’t Stir! This is the most important rule. The layers are key to the magic. Let the oven do the work.
· Butter Temperature: The butter should be hot and melted, but not browned or burned. If it starts to brown while melting, take it out immediately.
· Fruit Options: This recipe is incredibly versatile.
· Fresh Peaches: Use 3-4 cups of sliced fresh peaches. Increase the sugar sprinkled on top to ½ cup, as fresh fruit is less sweet. You may need to add ½ cup of water or peach juice to the dish for extra sauce.
· Other Canned Fruit: This works beautifully with cherries, apricots, blueberries, or fruit cocktail.
· Frozen Fruit: No need to thaw! Use frozen peach slices or a mixed berry blend directly from the freezer.
· Add-Ins: Feel free to add a dash of nutmeg or a tablespoon of lemon juice to the peaches for extra flavor.
Serving Suggestions
· A La Mode: This is non-negotiable for many! Serve warm with a scoop of vanilla ice cream. The contrast between the hot cobbler and cold ice cream is heavenly.
· With Whipped Cream: A dollop of fresh whipped cream is a classic topping.
