Ingredients
For the Pork Chops:
- 4 bone-in or boneless pork chops (about 1 inch thick)
- Salt and pepper, to taste
- 2 tablespoons olive oil (or vegetable oil)
- 1 tablespoon butter (optional)
For the Brown Sauce:
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth (or beef broth)
- 1 tablespoon soy sauce (optional, for depth of flavor)
- 1 teaspoon Dijon mustard (optional, for a tangy kick)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 2 teaspoons cornstarch (optional for thickening)
- 1 tablespoon water (if using cornstarch)
Instructions
1. Prepare the Pork Chops
- Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
2. Heat the Pan
- In a large skillet, heat the olive oil over medium-high heat. If you’re using butter, add it to the oil for extra flavor.
3. Sear the Pork Chops
- Once the oil is hot and shimmering, add the pork chops to the skillet. Sear for about 4-5 minutes on each side, or until they develop a nice golden-brown crust and the internal temperature reaches 145°F (63°C).
- Remove the pork chops from the skillet and set them aside to rest on a plate. Cover them loosely with foil to keep warm.
4. Prepare the Brown Sauce
- In the same skillet, reduce the heat to medium and add the chopped onion. Sauté until the onion is soft and translucent (about 3-4 minutes).
- Add the minced garlic and cook for another 30 seconds until fragrant.
5. Add Broth and Seasonings
- Pour in the chicken broth, scraping any brown bits from the bottom of the pan with a wooden spoon (this adds great flavor).
- Stir in the soy sauce, Dijon mustard, Worcestershire sauce, and thyme. Let the sauce simmer for about 5-7 minutes to allow the flavors to meld.
6. Thicken the Sauce (Optional)
- If you prefer a thicker sauce, mix the cornstarch with water to create a slurry. Slowly whisk this mixture into the simmering sauce, and cook for an additional 1-2 minutes until it thickens.
7. Return the Pork Chops to the Sauce
- Add the pork chops back into the skillet, turning them to coat in the sauce. Allow them to heat through for about 2-3 minutes.
8. Serve
- Serve the pork chops drizzled with the savory brown sauce. Pair with mashed potatoes, rice, or your favorite vegetables for a complete meal.
