Tater Tot Casserole Breakfast Recipe

Ingredients

  • 1 bag (32 oz) frozen tater tots
  • 1 lb ground breakfast sausage (or your choice of cooked bacon/ham)
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion (optional)
  • 1/2 cup diced bell pepper (optional)
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat the Oven:
Preheat your oven to 425°F (220°C).
  2. Cook the Sausage:
In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. If using, add diced onions and bell peppers during the last few minutes of cooking until softened. Drain any excess fat if necessary and set aside.
  3. Prepare the Egg Mixture:
In a mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.
  4. Layer the Casserole:
  • In a greased 9×13-inch baking dish, spread the cooked sausage evenly across the bottom.
  • Pour the egg mixture over the sausage.
  • Top with the frozen tater tots, spreading them out evenly.
  • Sprinkle the shredded cheddar cheese over the tater tots.
  1. Bake:
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the egg is set, the tater tots are golden brown, and the cheese is bubbly.
  2. Serve:
Let the casserole cool for a few minutes before slicing. Serve warm and enjoy!

Tips

  • Protein Options: You can substitute sausage with cooked bacon, diced ham, or even a vegetarian option with just veggies.
  • Add Veggies: Feel free to add other vegetables like spinach, mushrooms, or tomatoes for extra flavor and nutrition.
  • Make-Ahead: You can prepare the casserole the night before, keeping the tater tots on the side until you’re ready to bake. Just add them on top before baking.

This Tater Tot Casserole Breakfast is perfect for brunches, holiday gatherings, or even a comforting weekday breakfast! Enjoy!
