Quick and Tender Chuck Roast Recipe

Ingredients:

  • 3-4 lbs chuck roast
  • 1 tablespoon (15g) olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • 1 cup beef broth or red wine
  • 1 onion, sliced
  • 3-4 carrots, cut into chunks
  • 2-3 sprigs of fresh thyme (or 1 teaspoon dried thyme)
  • 2-3 sprigs of fresh rosemary (or 1 teaspoon dried rosemary)

Instructions:

  1. Sear the Roast:
  • In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
  • While the oil heats, pat the chuck roast dry with paper towels. Season generously with salt, pepper, garlic powder, onion powder, and smoked paprika (if using).
  • Once the oil is hot, sear the roast on all sides until browned, about 2-3 minutes per side. This adds flavor and helps lock in juices.
  1. Prepare the Instant Pot or Slow Cooker:
  • Remove the roast from the skillet and place it in a slow cooker or Instant Pot.
  • Pour the beef broth or red wine over the roast, then arrange the sliced onion, carrot chunks, thyme, and rosemary around it.
  1. Cooking:
  • For Instant Pot: Close the lid, set the valve to sealing, and cook on high pressure for 60-70 minutes. Allow for a natural release for about 15 minutes before quick-releasing the remaining pressure.
  • For Slow Cooker: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the meat is fork-tender.
  1. Serve:
  • Once the roast is done, remove it from the cooker and let it rest for about 10 minutes. Slice or shred the meat, and serve it with the vegetables and some of the cooking liquid as gravy.

Tips for Success:

  • Marinating Ahead: If you think you’ll often want to prepare this dish, consider marinating the roast in the spices and some beef broth overnight for even more flavor.
  • Flavor Boost: You can add other vegetables like potatoes or parsnips, or even some bay leaves for a richer flavor.
