Classic Blackberry Cobbler Recipe
Ingredients:
- For the filling:
- 4 cups fresh blackberries (you can also use frozen, just thaw them)
- 1 cup granulated sugar (adjust to taste)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- For the cobbler topping:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions:
- Preheat Your Oven: Preheat your oven to 350°F (175°C).
- Prepare the Filling: In a large mixing bowl, combine the blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the blackberries with the sugar and let them sit while you prepare the topping.
- Prepare the Topping: In another mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract. Stir until just combined.
- Assemble the Cobbler:
- Pour the blackberry mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Gently pour the cake-like batter over the blackberries. Do not stir; it will float and bake around the fruit.
- Bake: Bake in the preheated oven for 45-50 minutes or until the topping is golden brown and a toothpick inserted in the topping comes out clean.
- Cool and Serve: Allow the cobbler to cool slightly, then serve warm. It’s delicious on its own or with a scoop of vanilla ice cream.
