Fruit Cobbler Recipe

Ingredients

For the Fruit Filling:

  • 4 cups of fresh or frozen fruit (such as peaches, berries, apples, or cherries)
  • 1/2 to 1 cup granulated sugar (adjust based on the sweetness of the fruit)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)

For the Topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  2. Prepare the Fruit Filling:
    In a large bowl, combine the fruit, sugar, lemon juice, and cornstarch (if using). Toss until the fruit is well coated. Pour the mixture into a greased baking dish (approximately 9×13 inches).
  3. Make the Topping:
    In another bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and vanilla extract (if using). Stir until just combined; it should be a bit lumpy.
  4. Assemble the Cobbler:
    Spoon the topping over the fruit filling. It’s okay if it doesn’t cover all the fruit; it will spread as it bakes.
  5. Bake:
    Place the dish in the preheated oven and bake for about 30-40 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
  6. Cool and Serve:
    Allow the cobbler to cool slightly before serving. It can be enjoyed warm or at room temperature, often served with a scoop of vanilla ice cream or whipped cream.
