Hawaiian Pineapple Cake.
Ingredients
For the Cake:
- 1 box of yellow cake mix
- 1 can (20 oz) crushed pineapple in juice, undrained
- 3 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
For the Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (as needed)
For the Topping (optional):
- Shredded coconut
- Chopped pecans or walnuts
- Fresh pineapple slices
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). - Prepare the Cake Batter:
In a large bowl, combine the cake mix, crushed pineapple (with juice), eggs, vegetable oil, and vanilla extract. Mix well until smooth. - Bake the Cake:
Pour the batter into a greased 9×13 inch baking pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan. - Make the Frosting:
In a medium bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth. If the frosting is too thick, add milk, one tablespoon at a time, until you reach your desired consistency. - Frost the Cake:
Once the cake is completely cooled, spread the cream cheese frosting evenly over the top. - Add Toppings:
Sprinkle shredded coconut and chopped nuts on top, if desired. You can also add fresh pineapple slices for decoration. - Serve:

Tips:
- You can also add some crushed pineapple to the frosting for an extra burst of flavor.
