Cranberry Salad with Apples and Nuts
Ingredients:
- 2 cups fresh cranberries (or 1 can of whole-berry cranberry sauce)
- 1 apple, chopped (Granny Smith or Honeycrisp works well)
- 1 cup walnuts or pecans, chopped
- 1 cup mini marshmallows (optional)
- 1/2 cup sugar (adjust to taste, depending on the tartness of cranberries)
- 1 cup Greek yogurt or whipped cream (for creaminess)
- 1 tsp vanilla extract (optional)
- 3 tablespoons orange juice (optional)
Instructions:
- Prepare the Cranberries:
- If using fresh cranberries, rinse them under cold water. If you want them less tart, you can blend them with sugar first to create a cranberry sauce.
- If using canned cranberry sauce, you can skip this step.
- Mix Ingredients:
- In a large bowl, combine the fresh cranberries (or cranberry sauce), chopped apple, walnuts or pecans, and mini marshmallows (if using).
- Add Sweetness:
- Sprinkle sugar over the mixture. You can adjust the amount of sugar according to your preference.
- If using orange juice, add it at this point for added flavor.
- Incorporate Creaminess:
- Gently fold in the Greek yogurt or whipped cream. If you use yogurt, the salad will be tangier, while whipped cream will be sweeter and lighter.
- Flavor it Up:
- Add vanilla extract for extra flavor if desired.
- Chill:
- Refrigerate the salad for at least an hour before serving to allow the flavors to meld together.
- Serve:
- Serve chilled as a side dish or dessert during holiday meals, potlucks, or family gatherings.
