Homemade Caramel Corn Recipe

Ingredients:

  • Popcorn:
  • 1 cup unpopped popcorn kernels (or about 12 cups popped popcorn)
  • Caramel Sauce:
  • 1 cup unsalted butter (2 sticks)
  • 2 cups brown sugar (packed)
  • 1/2 cup corn syrup (light or dark)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions:

  1. Pop the Popcorn:
  • Pop the popcorn kernels using an air popper, stovetop method, or microwave. Make sure to remove any unpopped kernels and place the popped popcorn in a large mixing bowl. You want to ensure it’s lightly coated and not soggy.
  1. Make the Caramel Sauce:
  • In a medium saucepan, melt the butter over medium heat.
  • Once the butter is melted, add the brown sugar, corn syrup, and salt. Stir constantly until the mixture comes to a boil.
  • Once it starts boiling, stop stirring and allow it to boil for 4-5 minutes without stirring.
  • Remove from heat and carefully stir in the vanilla extract and baking soda. The mixture will bubble up, so be cautious.
  1. Combine Popcorn and Caramel:
  • Immediately pour the caramel sauce over the popped popcorn. Using a spatula or wooden spoon, gently mix to thoroughly coat the popcorn with the caramel.
  1. Bake:
  • Preheat your oven to 250°F (120°C).
  • Spread the caramel popcorn evenly on a large baking sheet lined with parchment paper or a silicone baking mat.
  • Bake for about 1 hour, stirring every 15 minutes to ensure even coating.
  1. Cool and Store:
  • Remove the caramel corn from the oven and let it cool completely. Once cooled, break apart any large clusters.
  • Store in an airtight container for up to a week.

Optional Add-Ins:

  • For extra flavor, consider adding nuts (like peanuts or almonds) or even chocolate drizzle once it’s cooled.
