Homemade Caramel Corn Recipe
Ingredients:
- Popcorn:
- 1 cup unpopped popcorn kernels (or about 12 cups popped popcorn)
- Caramel Sauce:
- 1 cup unsalted butter (2 sticks)
- 2 cups brown sugar (packed)
- 1/2 cup corn syrup (light or dark)
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Instructions:
- Pop the Popcorn:
- Pop the popcorn kernels using an air popper, stovetop method, or microwave. Make sure to remove any unpopped kernels and place the popped popcorn in a large mixing bowl. You want to ensure it’s lightly coated and not soggy.
- Make the Caramel Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Once the butter is melted, add the brown sugar, corn syrup, and salt. Stir constantly until the mixture comes to a boil.
- Once it starts boiling, stop stirring and allow it to boil for 4-5 minutes without stirring.
- Remove from heat and carefully stir in the vanilla extract and baking soda. The mixture will bubble up, so be cautious.
- Combine Popcorn and Caramel:
- Immediately pour the caramel sauce over the popped popcorn. Using a spatula or wooden spoon, gently mix to thoroughly coat the popcorn with the caramel.
- Bake:
- Preheat your oven to 250°F (120°C).
- Spread the caramel popcorn evenly on a large baking sheet lined with parchment paper or a silicone baking mat.
- Bake for about 1 hour, stirring every 15 minutes to ensure even coating.
- Cool and Store:
- Remove the caramel corn from the oven and let it cool completely. Once cooled, break apart any large clusters.
- Store in an airtight container for up to a week.
Optional Add-Ins:
- For extra flavor, consider adding nuts (like peanuts or almonds) or even chocolate drizzle once it’s cooled.
