No Bake Chocolate Oat Bars

Ingredients:

  • 1 ½ cups rolled oats
  • 1 cup almond butter (or peanut butter)
  • ½ cup honey or maple syrup
  • ⅓ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt (optional)
  • ½ cup chocolate chips (optional, for topping or mixing in)
  • Optional add-ins: chopped nuts, seeds, or dried fruits

Instructions:

  1. Prepare the Pan:
  • Line an 8×8-inch (or similar size) baking dish with parchment paper, leaving some overhang for easier removal later.
  1. Mix Wet Ingredients:
  • In a mixing bowl, combine the almond butter and honey (or maple syrup). If using, add the vanilla extract and salt. Stir until smooth and well combined.
  1. Incorporate Dry Ingredients:
  • Add the rolled oats and cocoa powder to the wet mixture. Stir until all the oats are coated and everything is mixed evenly. If desired, fold in chocolate chips or any other add-ins you like.
  1. Press the Mixture:
  • Pour the mixture into the prepared baking dish. Using a spatula or the back of a spoon, press the mixture down firmly and evenly.
  1. Chill and Set:
  • Place the dish in the refrigerator for at least 1 hour to allow the bars to set. This makes them easier to cut.
  1. Cut and Serve:
  • Once set, lift the bars out of the dish using the parchment paper. Cut into squares or rectangles as desired.
  1. Storage:
  • Store the bars in an airtight container in the fridge for up to a week, or freeze for longer storage.

  • For a sweeter bar, you can adjust the amount of honey or syrup.
  • Feel free to customize the recipe by adding your favorite ingredients like shredded coconut, raisins, or nut butter swirls on top.
