Broccoli Rice Chicken and Cheese Casserole
Ingredients
- 2 cups cooked chicken, shredded or diced
- 2 cups cooked rice (white or brown)
- 2 cups broccoli florets (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup (or you can use a homemade version)
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1/4 cup breadcrumbs (optional for topping)
- 2 tbsp olive oil or melted butter (optional for breadcrumb topping)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Broccoli: If using fresh broccoli, steam or blanch it until just tender. If using frozen, you can microwave or cook it according to the package instructions.
- Mix Ingredients: In a large mixing bowl, combine the cooked chicken, cooked rice, broccoli, cream of chicken soup, milk, garlic powder, onion powder, salt, pepper, and 1 cup of shredded cheese. Stir until well combined.
- Transfer to Casserole Dish: Pour the mixture into a greased 9×13 inch baking dish. Spread it out evenly.
- Add Toppings: If you want a crispy topping, mix breadcrumbs with olive oil or melted butter and sprinkle it over the casserole. You can also add more cheese on top if desired.
- Bake: Bake in the preheated oven for about 25-30 minutes, or until the casserole is bubbly and the top is lightly golden.
- Serve: Remove from the oven and let it sit for a few minutes before serving. Enjoy your hearty casserole!
