Laura Bush’s Cowboy Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups rolled oats
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans (or walnuts)
- 1 cup shredded coconut (optional)
- 1 cup dried cranberries or raisins (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the butter and sugar mixture, mixing until well combined.
- Stir in the oats, chocolate chips, chopped nuts, coconut, and dried fruit, if using.
- Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each one as they will spread while baking.
- Bake in the preheated oven for about 10 to 12 minutes or until lightly browned.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
