Easy Southern Potato Salad
Ingredients:
- 2 lbs baby potatoes (or regular potatoes)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons Dijon mustard (or yellow mustard)
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1 teaspoon salt (more to taste)
- 1/2 teaspoon black pepper (more to taste)
- 3 hard-boiled eggs, chopped
- 1/2 cup celery, diced
- 1/2 cup red onion, diced (or green onions for a milder flavor)
- 1 cup pickles (sweet or dill, diced) or relish
- Paprika for garnish (optional)
Instructions:
- Cook the Potatoes:
- Wash the baby potatoes and cut them in half (or quarter larger potatoes). Place them in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil and cook for about 10-15 minutes, or until the potatoes are tender but not mushy. Test with a fork; they should be easily pierced but still hold their shape. Drain and let cool slightly.
- Prepare the Dressing:
- In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Mix until smooth.
- Combine Ingredients:
- Once the potatoes have cooled enough to handle, cut them into bite-sized pieces (if you haven’t done so already) and add them to the mixing bowl with the dressing.
- Gently fold in the chopped hard-boiled eggs, celery, red onion, and pickles or relish. Mix until everything is well coated.
- Taste and Adjust:
- Taste the potato salad and adjust seasoning as needed, adding more salt, pepper, or mayonnaise according to your preference.
- Chill:
- Cover the bowl with plastic wrap or transfer the potato salad to an airtight container. Refrigerate for at least 1-2 hours (or overnight) to allow the flavors to meld together.
- Serve:
- Before serving, give the potato salad a gentle stir. Garnish with a sprinkle of paprika, if desired. Enjoy!
