Easy Southern Potato Salad

Ingredients:

  • 2 lbs baby potatoes (or regular potatoes)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard (or yellow mustard)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt (more to taste)
  • 1/2 teaspoon black pepper (more to taste)
  • 3 hard-boiled eggs, chopped
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced (or green onions for a milder flavor)
  • 1 cup pickles (sweet or dill, diced) or relish
  • Paprika for garnish (optional)

Instructions:

  1. Cook the Potatoes:
  • Wash the baby potatoes and cut them in half (or quarter larger potatoes). Place them in a large pot and cover with cold water. Add a pinch of salt.
  • Bring to a boil and cook for about 10-15 minutes, or until the potatoes are tender but not mushy. Test with a fork; they should be easily pierced but still hold their shape. Drain and let cool slightly.
  1. Prepare the Dressing:
  • In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Mix until smooth.

  • Once the potatoes have cooled enough to handle, cut them into bite-sized pieces (if you haven’t done so already) and add them to the mixing bowl with the dressing.
  • Gently fold in the chopped hard-boiled eggs, celery, red onion, and pickles or relish. Mix until everything is well coated.

  • Taste the potato salad and adjust seasoning as needed, adding more salt, pepper, or mayonnaise according to your preference.

  • Cover the bowl with plastic wrap or transfer the potato salad to an airtight container. Refrigerate for at least 1-2 hours (or overnight) to allow the flavors to meld together.

  • Before serving, give the potato salad a gentle stir. Garnish with a sprinkle of paprika, if desired. Enjoy!
