Crockpot Chicken and Dumplings: A Comforting Classic
Ingredients:
For the Chicken and Soup Base:
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 can (10.5 oz) condensed cream of chicken soup (or homemade)
- 1 can (10.5 oz) condensed cream of celery soup (or homemade)
- 1 cup chicken broth (more if you prefer a thinner soup)
- 1 medium onion, chopped
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
For the Dumplings:
- 2 cups biscuit mix (like Bisquick)
- 2/3 cup milk
- 1 tablespoon dried parsley (optional for flavor)
Instructions:
- Prepare the Chicken Base:
- In your crockpot, add the chicken, cream of chicken soup, cream of celery soup, chicken broth, onion, carrots, celery, garlic, dried thyme, and dried parsley. Season with salt and pepper to taste.
- Stir to combine all the ingredients.
- Cook the Chicken:
- Cover the crockpot and cook on low for about 6-8 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.
- Shred the Chicken:
- Once cooked, remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken back into the crockpot and stir to combine.
- Make the Dumplings:
- In a mixing bowl, combine the biscuit mix and milk until a soft dough forms. You can add dried parsley for extra flavor if desired.
- Add Dumplings to the Crockpot:
- Drop spoonfuls of the dumpling mixture on top of the chicken mixture in the crockpot. Be sure to leave space between each dumpling, as they will expand while cooking.
- Cook the Dumplings:
- Cover the crockpot and cook on high for an additional 1-2 hours, until the dumplings are cooked through and fluffy.
- Serve:
- Once the dumplings are done, scoop out portions of the chicken and dumplings and serve hot. Enjoy this comforting and hearty meal!
Tips:
- For added flavor, consider adding peas or corn to the chicken mixture.
- If you prefer a thicker stew, you can mix a tablespoon of cornstarch with a little water and stir it into the mixture during the last hour of cooking.
