Italian Drunken Noodles: A Hearty & Flavorful One-Pan Meal

Ingredients:

  • Noodles: 8 oz (225 g) of your choice (e.g., linguine or fettuccine)
  • Protein: 1 lb (450 g) chicken breast or Italian sausage, sliced (or use shrimp, tofu, or veggies for a vegetarian option)
  • Vegetables:
  • 1 cup bell peppers (any color), sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or kale
  • Aromatics:
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Sauce:
  • 1/2 cup wine (red or white, depending on your preference)
  • 1/4 cup chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Toppings:
  • Fresh basil leaves, chopped
  • Grated Parmesan cheese
  • Lemon wedges for serving

Instructions:

  1. Cook the Noodles:
  • Bring a large pot of salted water to a boil. Cook the noodles according to package instructions until al dente. Drain and set aside.
  1. Prepare the Protein:
  • In a large skillet or wok, heat the olive oil over medium-high heat. Add the sliced chicken or sausage and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  1. Sauté the Vegetables:
  • In the same pan, add the onion and garlic. Sauté for 2-3 minutes until fragrant.
  • Add the bell peppers, zucchini, and red pepper flakes. Cook for another 3-4 minutes until the vegetables are tender but still crisp.
  1. Make the Sauce:
  • Pour in the wine and broth, scraping any bits off the bottom of the pan. Allow to simmer for a couple of minutes.
  • Stir in the cooked protein, soy sauce, and balsamic vinegar. Let it cook together for an additional 3-4 minutes.
  1. Combine with Noodles:
  • Add the cooked noodles to the skillet. Toss everything together, ensuring the noodles are coated in the sauce. Add the spinach or kale and cook until wilted.
  1. Serve:
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve hot, garnished with fresh basil, a sprinkle of Parmesan cheese, and lemon wedges on the side.

Tips:

  • Customization: Feel free to add other vegetables like mushrooms, baby corn, or asparagus for more variety.
  • Spiciness: For more heat, increase the amount of red pepper flakes or add a splash of hot sauce.
  • Wine-Free Option: You can skip the wine and increase the broth for a non-alcoholic version.

Enjoy this hearty and flavorful Italian Drunken Noodles as a convenient weeknight dinner that is sure to impress your family and friends!
