Crab and Shrimp Seafood Bisque
Ingredients
- For the stock:
- 1 lb shrimp shells (from large shrimp, peeled and deveined)
- 1 onion, coarsely chopped
- 2 stalks celery, coarsely chopped
- 1 carrot, coarsely chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tsp black peppercorns
- 1/4 cup white wine (optional)
- 6 cups water
- For the bisque:
- 2 tbsp olive oil or unsalted butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 1-2 cups stock from above (or as needed)
- 1 lb lump crab meat, picked over for shells
- 1 lb cooked shrimp, chopped
- 1 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- Chopped fresh parsley or chives, for garnish
- Lemon wedges, for serving
Instructions
- Make the Seafood Stock:
- In a large pot, combine shrimp shells, onion, celery, carrot, garlic, bay leaf, peppercorns, and white wine (if using).
- Add 6 cups of water and bring to a boil.
- Reduce heat and let simmer for 30-45 minutes. Strain the mixture, discarding solids, and set aside the stock.
- Prepare the Bisque:
- In a large pot or Dutch oven, heat the olive oil or butter over medium heat.
- Add the finely chopped onion and garlic, sauté until softened, about 5 minutes.
- Stir in the flour and cook for an additional 2 minutes to create a roux.
- Gradually whisk in the strained seafood stock until well combined and smooth.
- Add Cream and Flavorings:
- Stir in the heavy cream and bring the mixture to a gentle simmer.
- Add the tomato paste, paprika, cayenne pepper, salt, and black pepper. Taste and adjust seasoning.
- Add Crab and Shrimp:
- Gently fold in the lump crab meat and chopped shrimp.
- Let the bisque simmer for an additional 10 minutes until heated through.
- Serve:
- Ladle the bisque into bowls and garnish with chopped parsley or chives. Serve with lemon wedges on the side for an extra burst of flavor.
