Smothered Pork Chops with Potatoes in Gravy

Ingredients:

  • For the pork chops:
  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil or vegetable oil
  • 1 medium onion, sliced
  • 2-3 cloves garlic, minced
  • For the potatoes:
  • 4 medium potatoes, peeled and sliced (about 1/4 inch thick, you can use Russet or Yukon Gold)
  • 2 cups chicken broth or broth of choice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme (optional)
  • For the gravy:
  • 1/4 cup all-purpose flour
  • 2 cups milk (or a mix of milk and broth for a richer flavor)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Pork Chops:
  • Season both sides of the pork chops with salt, pepper, garlic powder, onion powder, and paprika.
  1. Sear the Pork Chops:
  • In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, add the pork chops and sear them for about 4-5 minutes on each side until they are golden brown. Remove the chops from the skillet and set aside.
  1. Sauté the Onions and Garlic:
  • In the same skillet, add the sliced onions and cook for about 3-4 minutes until they begin to soften. Add the minced garlic and sauté for an additional minute until fragrant.
  1. Prepare the Potatoes:
  • Layer the sliced potatoes in the skillet evenly over the onions, then place the seared pork chops on top of the potatoes. Pour the chicken broth and Worcestershire sauce over everything. If using, sprinkle the fresh thyme on top.
  1. Cook:
  • Cover the skillet with a lid and reduce the heat to low. Let it simmer for 25-30 minutes, or until the potatoes are tender and the pork chops are cooked through (internal temperature should reach 145°F/63°C).
  1. Make the Gravy:
  • Once the pork chops and potatoes are cooked, remove them from the skillet and keep warm. In the same skillet, if there is excess liquid, you can drain some out, leaving about 1-2 cups to make the gravy.
  • In a bowl, whisk together the flour and milk until smooth. Gradually stir this mixture into the skillet over medium heat, whisking constantly, until the gravy thickens (about 3-5 minutes). Season with salt and pepper to taste. If the gravy is too thick, you can add a bit more milk or broth to reach your desired consistency.
  1. Serve:
  • Place the pork chops and potatoes on plates and spoon the gravy over the top. Enjoy!

Tips:

  • Vegetable Variation: You can also add other vegetables like carrots, bell peppers, or even mushrooms to the dish for added flavor and nutrition.
  • Cooking Method: This dish can be made in a slow cooker as well. Sear the pork chops first, then layer everything in the slow cooker and cook on low for 6-8 hours.
  • Leftovers: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
