Golden Potato Patties Recipe

Ingredients:

  • For the patties:
  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup all-purpose flour (plus more for dusting)
  • 1/4 cup grated cheese (optional; cheddar or Parmesan work well)
  • 1/4 cup finely chopped green onions or chives
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Salt and pepper to taste
  • 1 large egg
  • Breadcrumbs (optional, for coating)

  • Vegetable oil (for frying)

Instructions:

  1. Prepare the Potato Mixture:
  • In a large bowl, combine the mashed potatoes, flour, cheese (if using), green onions or chives, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
  1. Add the Egg:
  • Beat the egg in a small bowl and then add it to the potato mixture. Mix until well combined. This will help bind the mixture together. If it’s too wet, you can add a little more flour.
  1. Form the Patties:
  • Take small portions of the mixture (about 2-3 tablespoons) and shape them into patties. You can dust your hands with a bit of flour to prevent sticking. If you’d like, you can coat the patties in breadcrumbs for extra crunch.
  1. Heat the Oil:
  • In a skillet, heat about 1/2 inch of vegetable oil over medium heat. You can test if the oil is hot enough by dropping in a small piece of the potato mixture—it should sizzle.
  1. Fry the Patties:
  • Carefully place the patties in the hot oil, making sure not to overcrowd the skillet. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat if necessary to prevent burning.
  1. Drain:
  • Once golden brown, transfer the patties to a plate lined with paper towels to drain excess oil.
  1. Serve:
  • Serve warm, optionally with a dipping sauce like sour cream, yogurt, or your favorite hot sauce.

  • Variations: Feel free to add other ingredients like finely chopped herbs (parsley, cilantro), cooked bacon bits, or sautéed vegetables (like bell peppers or mushrooms) to the mixture for extra flavor.
  • Baking Option: If you prefer a healthier option, you can bake the patties in a preheated oven at 400°F (200°C) on a lightly greased baking sheet for about 20-25 minutes, flipping halfway through, until golden brown.
  • Freezing: You can freeze uncooked patties on a baking sheet and once they’re frozen solid, transfer them to a zip-top bag. Fry them from frozen, adding a little extra cooking time.
