Homemade Panko Cookies Recipe
Ingredients:
- 1 cup panko breadcrumbs
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips or dried fruit (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a bowl, combine the panko breadcrumbs, all-purpose flour, baking powder, salt, and cinnamon (if using). Stir well and set aside.
- Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy. This should take about 2-3 minutes.
- Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, beating until well combined.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you’re adding chocolate chips or dried fruit, fold those in now.
- Form Cookies: Use a tablespoon or cookie scoop to drop dollops of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown. The centers might look slightly underbaked – that’s okay; they’ll set as they cool.
- Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Serve: Enjoy your panko cookies! They are delicious on their own or paired with a glass of milk.
Tips:
- You can experiment by adding nuts, seeds, or different types of chips to change up the flavor and texture.
- If you want a crunchier cookie, you can toast the panko breadcrumbs in a dry skillet for a few minutes before adding them to the dough.
