Big Apple Fritters Recipe

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup peeled, cored, and diced apples (about 2 medium apples)
  • Optional: 1/2 cup raisins or walnuts (for added texture)

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk (or water)
  • 1/2 teaspoon vanilla extract (optional)

For Frying:

  • Oil for frying (vegetable oil or canola oil)

Instructions:

  1. Prepare the Apples:
  • Peel, core, and dice the apples into small pieces. Set aside.
  1. Make the Dough:
  • In a large bowl, combine the all-purpose flour, baking powder, cinnamon, nutmeg (if using), salt, and granulated sugar.
  • In a separate bowl, whisk together the egg, milk, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined; the batter will be thick. Gently fold in the diced apples (and raisins or walnuts, if using).
  1. Heat the Oil:
  • In a deep skillet or fryer, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of batter into it; if it sizzles and rises to the top, the oil is ready.
  1. Fry the Fritters:
  • Using a spoon or ice cream scoop, drop about 1/4 cup of batter into the hot oil for each fritter. Don’t overcrowd the pan; fry in batches if needed.
  • Fry for about 3-4 minutes on each side or until golden brown. Use a slotted spoon to remove the fritters and place them on a paper towel-lined plate to drain excess oil.
  1. Make the Glaze:
  • While the fritters are cooling, prepare the glaze by whisking together the powdered sugar, milk (or water), and vanilla extract in a small bowl until smooth. Adjust the consistency as needed by adding more milk or powdered sugar.
  1. Glaze the Fritters:
  • Once the fritters have cooled slightly, drizzle the glaze over the top or dip the fritters directly into the glaze for a more generous coating.
  1. Serve:
  • Enjoy the apple fritters warm or at room temperature. They’re best eaten fresh but can be stored in an airtight container for a couple of days.

Tips:

  • For added flavor, consider adding a pinch of nutmeg, or you can use different spices like allspice or ginger.
  • Try using different types of apples for varied sweetness and texture; Granny Smith apples are great for a tart flavor, while Honeycrisp adds sweetness.
  • These fritters can also be enjoyed with powdered sugar dusted on top instead of glaze for a simpler treat.
