Hearty Beef and Vegetable Soup
Ingredients:
- 1 pound beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup green beans, cut into 1-inch pieces
- 4 cups beef broth (or stock)
- 1 can (14.5 oz) diced tomatoes (with juices)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 2 cups potatoes, peeled and diced (optional)
- 1 cup frozen peas (optional)
- Fresh parsley, for garnish (optional)
Instructions:
- Brown the Beef:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
- Sauté the Vegetables:
- In the same pot, add the diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the carrots, celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
- Combine Ingredients:
- Return the browned beef to the pot.
- Stir in the diced tomatoes (with juices), beef broth, bay leaves, thyme, oregano, and any optional potatoes.
- Season with salt and pepper to taste.
- Simmer the Soup:
- Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender.
- Add Remaining Vegetables:
- Add the zucchini, green beans, and frozen peas to the pot about 15-20 minutes before the soup is done cooking.
- Final Seasoning:
- Taste the soup and adjust seasoning with more salt, pepper, or herbs if needed.
- Serve:
- Remove the bay leaves before serving.
- Serve hot, garnished with fresh parsley if desired.
Tips:
- You can customize the vegetables based on what you have on hand or your preferences.
- This soup is great for meal prep and can be stored in the refrigerator for a few days, or frozen for longer storage.
- For added flavor, consider adding a splash of Worcestershire sauce or a dash of hot sauce.
