Ingredients:

  • 1 cup corn (canned or frozen, thawed)
  • 1/2 cup red onion, diced
  • 1/2 cup diced bell pepper (optional)
  • 1 cup Doritos, roughly crushed (choose your favorite flavor, like nacho cheese)
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup salsa (store-bought or homemade)
  • 1 avocado, diced (optional)
  • Fresh cilantro (for garnish, optional)

Instructions:

  1. Cook the Meat:
  • In a skillet over medium heat, cook the ground beef (or substitute) until browned and cooked through, breaking it apart with a spoon. Drain excess fat if necessary.
  • Add the taco seasoning and follow package directions (usually involves adding water and simmering for a few minutes). Remove from heat.
