Grandma’s Classic Stuffed Celery

Ingredients

  • Celery stalks: 1 bunch (preferably large and crisp)
  • Cream cheese: 8 oz (softened)
  • Mayonnaise: 2 tablespoons
  • Garlic powder: 1/2 teaspoon (optional)
  • Onion powder: 1/2 teaspoon
  • Fresh herbs: 2 tablespoons (chopped, such as parsley or dill; optional)
  • Chopped nuts: 1/4 cup (such as walnuts or pecans; optional)
  • Salt and pepper: to taste
  • Paprika or chili powder: for garnish (optional)

Instructions

  1. Prepare the Celery: Wash the celery stalks and cut them into 3-4 inch pieces. Discard the ends and any tough sections.
  2. Make the Filling:
  • In a mixing bowl, combine the softened cream cheese and mayonnaise.
  • Add the garlic powder, onion powder, chopped herbs (if using), and nuts (if desired).
  • Mix well until the filling is smooth and creamy. Season with salt and pepper to taste.
  1. Stuff the Celery: Use a small knife or a spatula to fill each celery piece with the cream cheese mixture. Make sure the filling is heaped on top for a nice presentation.
  2. Garnish: Sprinkle a little paprika or chili powder on top of the stuffed celery for added color and flavor, if desired.
  3. Chill and Serve: Place the stuffed celery on a platter and chill in the refrigerator for at least 30 minutes before serving. This helps the flavors meld.

Tips

  • You can customize the filling by adding ingredients like crumbled bacon, diced olives, or shredded cheese to suit your taste.
  • For a healthier option, substitute low-fat cream cheese and mayonnaise.
  • Stuffed celery is best enjoyed fresh, but you can prepare the filling a day ahead and stuff the celery just before serving.

Enjoy Grandma’s classic stuffed celery as a delicious and refreshing appetizer!
