Ingredients

Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or cooking spray.
- Prepare the Vegetables:
- Grate the zucchini and potato. Place them in a clean kitchen towel or cheesecloth and wring out the excess moisture. This step is crucial to avoid soggy muffins.
- Mix the Batter:
- In a large bowl, combine the grated zucchini and potato.
- Add the grated Parmesan cheese, all-purpose flour, eggs, baking powder, garlic powder, onion powder, salt, and pepper. If using, add the chopped parsley or chives.
- Mix until all ingredients are well combined.
- Fill the Muffin Tin:
- Spoon the mixture into the prepared muffin tin, filling each cup about 2/3 full.
- Bake:
