Low-Carb Butter Cookies
Ingredients:
- 1 cup (8 oz) unsalted butter, softened
- 1 cup granulated erythritol or your favorite low-carb sweetener (like monk fruit or stevia)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Optional:
- 1/2 teaspoon almond extract for additional flavor
- Sugar-free chocolate chips or nuts for added texture
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream Butter and Sweetener:
In a large mixing bowl, cream together the softened butter and sweetener until light and fluffy. This can be done using a hand mixer or stand mixer.
3. Add Egg and Vanilla:
Mix in the egg and vanilla extract (and almond extract if using) until well combined.
4. Combine Dry Ingredients:
In a separate bowl, whisk together the almond flour, baking powder, and salt.
5. Mix Together:
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If you’re adding chocolate chips or nuts, fold them in at this stage.
6. Form Cookies:
Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet. Leave some space between each cookie, as they may spread slightly. You can flatten them slightly with the back of a fork or your hands if desired.
7. Bake:
Bake in the preheated oven for about 12-15 minutes, or until the edges are lightly golden.
8. Cool:
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Storage:
These cookies can be stored in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
