Vegetable Beef Soup Recipe
Ingredients:
- 1 lb (450g) beef stew meat, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 medium potatoes, diced
- 1 cup green beans, cut into 1-inch pieces
- 1 can (14.5 oz) diced tomatoes, with juice
- 6 cups beef broth
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions:
- Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides. This should take about 5-7 minutes. Remove the beef and set it aside.
- Sauté Vegetables: In the same pot, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent. Then, add the carrots and celery, cooking for an additional 5 minutes.
- Combine Ingredients: Return the browned beef to the pot. Add the diced potatoes, green beans, diced tomatoes (with their juice), corn, beef broth, Worcestershire sauce, thyme, parsley, salt, and pepper.
- Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.
- Adjust Seasoning: Taste and adjust seasoning with salt and pepper as needed.
- Serve: Serve hot, garnished with fresh parsley if desired. Enjoy with crusty bread or crackers!
Tips:
- Feel free to customize the soup with any vegetables you like, such as peas or zucchini.
- For a thicker soup, you can add a tablespoon of tomato paste.
- This soup freezes well, so you can make a big batch and save some for later!
