Vegetable Beef Soup Recipe

Ingredients:

  • 1 lb (450g) beef stew meat, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 6 cups beef broth
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions:

  1. Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides. This should take about 5-7 minutes. Remove the beef and set it aside.
  2. Sauté Vegetables: In the same pot, add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion is translucent. Then, add the carrots and celery, cooking for an additional 5 minutes.
  3. Combine Ingredients: Return the browned beef to the pot. Add the diced potatoes, green beans, diced tomatoes (with their juice), corn, beef broth, Worcestershire sauce, thyme, parsley, salt, and pepper.
  4. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.
  5. Adjust Seasoning: Taste and adjust seasoning with salt and pepper as needed.
  6. Serve: Serve hot, garnished with fresh parsley if desired. Enjoy with crusty bread or crackers!

Tips:

  • Feel free to customize the soup with any vegetables you like, such as peas or zucchini.
  • For a thicker soup, you can add a tablespoon of tomato paste.
  • This soup freezes well, so you can make a big batch and save some for later!
