Slow Cooker Scalloped Potatoes Recipe
Ingredients:
- 3-4 medium potatoes (about 2 pounds), thinly sliced
- 1 medium onion, thinly sliced
- 2 cups shredded cheese (cheddar, Gruyère, or a blend)
- 1 cup heavy cream
- 1 cup milk
- 3 tablespoons unsalted butter, melted
- 2 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 1/4 teaspoon dried thyme (optional)
Instructions:
- Prepare the Slow Cooker:
- Lightly grease the inside of your slow cooker with cooking spray or butter to prevent sticking.
- Layer the Ingredients:
- Begin by layering half of the sliced potatoes in the bottom of the slow cooker. Sprinkle half of the sliced onions, followed by half of the cheese.
- Repeat the layers with the remaining potatoes, onions, and cheese.
- Make the Cream Mixture:
- In a mixing bowl, combine the heavy cream, milk, melted butter, flour, minced garlic, salt, black pepper, paprika, and thyme. Whisk until smooth and well combined.
- Pour Over Layered Potatoes:
- Pour the cream mixture evenly over the layered potatoes and cheese in the slow cooker.
- Cook:
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the top is golden and bubbly.
- Check for Doneness:
- The dish is done when the potatoes are fork-tender. If you want a more golden top, you can transfer the scalloped potatoes to an oven-safe dish and broil for a few minutes, keeping a close eye on it to avoid burning.
- Serve:
- Let the scalloped potatoes sit for about 10-15 minutes before serving. This allows the sauce to thicken a bit.
