Slow Cooker Scalloped Potatoes Recipe

Ingredients:

  • 3-4 medium potatoes (about 2 pounds), thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cups shredded cheese (cheddar, Gruyère, or a blend)
  • 1 cup heavy cream
  • 1 cup milk
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 1/4 teaspoon dried thyme (optional)

Instructions:

  1. Prepare the Slow Cooker:
  • Lightly grease the inside of your slow cooker with cooking spray or butter to prevent sticking.
  1. Layer the Ingredients:
  • Begin by layering half of the sliced potatoes in the bottom of the slow cooker. Sprinkle half of the sliced onions, followed by half of the cheese.
  • Repeat the layers with the remaining potatoes, onions, and cheese.

  • In a mixing bowl, combine the heavy cream, milk, melted butter, flour, minced garlic, salt, black pepper, paprika, and thyme. Whisk until smooth and well combined.

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the top is golden and bubbly.

  • The dish is done when the potatoes are fork-tender. If you want a more golden top, you can transfer the scalloped potatoes to an oven-safe dish and broil for a few minutes, keeping a close eye on it to avoid burning.
