No Bake Homemade Crunch Bars Recipe
Ingredients
- 2 cups crispy rice cereal
- 1 cup milk chocolate chips (or chocolate of your choice)
- 1/2 cup creamy peanut butter (or almond butter)
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt (optional)
- 1 teaspoon vanilla extract (optional)
- Additional chocolate chips for topping (optional)
Instructions
- Prepare the Pan: Line an 8×8 inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal later.
- Melt the Chocolate and Peanut Butter:
- In a microwave-safe bowl, combine the milk chocolate chips and peanut butter.
- Microwave in 30-second increments, stirring after each, until the mixture is smooth and fully melted. This usually takes about 1-2 minutes total.
- If using honey or maple syrup, add it to the melted chocolate and peanut butter mixture along with the salt and vanilla extract, and stir until well combined.
- Combine with Cereal:
- In a large mixing bowl, add the crispy rice cereal.
- Pour the melted chocolate mixture over the rice cereal and gently fold until the cereal is evenly coated.
- Press into the Pan:
- Transfer the mixture to the prepared baking dish. Using a spatula or your hands, firmly press the mixture into the pan to create an even layer.
- If you’d like, you can sprinkle some additional chocolate chips on top and gently press them into the mixture.
- Chill:
- Place the baking dish in the refrigerator for at least 1-2 hours, or until the bars are set and firm.
- Cut and Serve:
- Once set, lift the bars out using the parchment paper overhang.
- Cut into squares or rectangles and enjoy!
Storage
Store the crunch bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
