No Bake Homemade Crunch Bars Recipe

Ingredients

  • 2 cups crispy rice cereal
  • 1 cup milk chocolate chips (or chocolate of your choice)
  • 1/2 cup creamy peanut butter (or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt (optional)
  • 1 teaspoon vanilla extract (optional)
  • Additional chocolate chips for topping (optional)

Instructions

  1. Prepare the Pan: Line an 8×8 inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal later.
  2. Melt the Chocolate and Peanut Butter:
  • In a microwave-safe bowl, combine the milk chocolate chips and peanut butter.
  • Microwave in 30-second increments, stirring after each, until the mixture is smooth and fully melted. This usually takes about 1-2 minutes total.
  • If using honey or maple syrup, add it to the melted chocolate and peanut butter mixture along with the salt and vanilla extract, and stir until well combined.
  1. Combine with Cereal:
  • In a large mixing bowl, add the crispy rice cereal.
  • Pour the melted chocolate mixture over the rice cereal and gently fold until the cereal is evenly coated.
  1. Press into the Pan:
  • Transfer the mixture to the prepared baking dish. Using a spatula or your hands, firmly press the mixture into the pan to create an even layer.
  • If you’d like, you can sprinkle some additional chocolate chips on top and gently press them into the mixture.
  1. Chill:
  • Place the baking dish in the refrigerator for at least 1-2 hours, or until the bars are set and firm.
  1. Cut and Serve:
  • Once set, lift the bars out using the parchment paper overhang.
  • Cut into squares or rectangles and enjoy!

Storage

Store the crunch bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
