Perfect Fruit Cake Recipe
Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup orange juice (freshly squeezed is best)
Fruits and Nuts:
- 2 cups mixed dried fruits (such as raisins, cranberries, apricots, and cherries)
- 1 cup chopped nuts (such as walnuts or pecans)
- 1/2 cup candied orange peel (optional)
Instructions
- Preheat Oven:
Preheat your oven to 325°F (160°C). Grease and flour a 9-inch round cake pan or line it with parchment paper. - Prepare the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, spices (cinnamon, nutmeg, cloves), and salt. Set aside. - Cream Butter and Sugar:
In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy. This should take about 3-5 minutes. - Add Eggs and Vanilla:
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and orange juice. - Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix. - Fold in the Fruits and Nuts:
Gently fold in the dried fruits, nuts, and candied orange peel until evenly distributed throughout the batter. - Pour into the Pan:
Pour the batter into the prepared cake pan and smooth the top with a spatula. - Bake:
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted in the center comes out clean. - Cool:
Once baked, remove the pan from the oven and let the cake cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. - Serve and Enjoy:
