Perfect Fruit Cake Recipe

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice (freshly squeezed is best)

  • 2 cups mixed dried fruits (such as raisins, cranberries, apricots, and cherries)
  • 1 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup candied orange peel (optional)

Instructions

  1. Preheat Oven:
    Preheat your oven to 325°F (160°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Prepare the Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, baking soda, spices (cinnamon, nutmeg, cloves), and salt. Set aside.
  3. Cream Butter and Sugar:
    In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy. This should take about 3-5 minutes.
  4. Add Eggs and Vanilla:
    Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and orange juice.

  6. Fold in the Fruits and Nuts:

    Pour the batter into the prepared cake pan and smooth the top with a spatula.

    Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted in the center comes out clean.

    Once baked, remove the pan from the oven and let the cake cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
