Pecan Sandies Recipe
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
- Optional: extra powdered sugar for dusting
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy. This should take about 2-3 minutes.
- Add Vanilla: Stir in the vanilla extract until well combined.
- Incorporate Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
- Fold in Pecans: Gently fold in the finely chopped pecans until evenly distributed throughout the dough.
- Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving space between each cookie as they will spread slightly.
- Bake: Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden. They may not look fully cooked in the center, but they will continue to set as they cool.
- Cool and Optional Dusting: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. If desired, dust the cooled cookies with extra powdered sugar.
