Pecan Sandies Recipe

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt
  • Optional: extra powdered sugar for dusting

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy. This should take about 2-3 minutes.
  3. Add Vanilla: Stir in the vanilla extract until well combined.
  4. Incorporate Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
  5. Fold in Pecans: Gently fold in the finely chopped pecans until evenly distributed throughout the dough.
  6. Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving space between each cookie as they will spread slightly.
  7. Bake: Bake in the preheated oven for about 15-18 minutes, or until the edges are lightly golden. They may not look fully cooked in the center, but they will continue to set as they cool.
  8. Cool and Optional Dusting: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. If desired, dust the cooled cookies with extra powdered sugar.

Enjoy!

These cookies are perfect for sharing or enjoying as a cozy afternoon treat. The buttery flavor and nutty crunch make them truly irresistible! Feel free to adjust the amount of pecans to match your preference. Enjoy your baking!
