Basic Recipe for Refrigerator Rolls

  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 4 cups all-purpose flour (plus extra for dusting)

  • 1 teaspoon salt

Instructions:

  1. Activate Yeast: In a bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix Ingredients: In a large mixing bowl, combine the melted butter, eggs, and salt. Mix in the yeast mixture.
  3. Add Flour: Gradually stir in the flour until a dough forms.
  4. Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. First Rise: Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place until it doubles in size (about 1-2 hours).
  6. Shape Rolls: Punch down the dough and divide it into small pieces. Shape each piece into a ball.
  7. Refrigerate: Place the dough balls in a greased pan or baking dish. Cover tightly with plastic wrap and refrigerate for at least 2 hours, or up to overnight.
  8. Second Rise: When you’re ready to bake, remove the rolls from the refrigerator and let them sit at room temperature for about 30-60 minutes, or until they have puffed up.
  9. Bake: Preheat your oven to 350°F (175°C). Bake the rolls for about 15-20 minutes, until golden brown.
