Basic Recipe for Refrigerator Rolls
Here’s a general recipe:
Ingredients:
- 1 cup warm milk (about 110°F or 43°C)
- 1/2 cup sugar
- 1/2 cup butter, melted
- 2 eggs
- 4 cups all-purpose flour (plus extra for dusting)
- 2 1/4 teaspoons active dry yeast (or 1 packet)
- 1 teaspoon salt
Instructions:
- Activate Yeast: In a bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
- Mix Ingredients: In a large mixing bowl, combine the melted butter, eggs, and salt. Mix in the yeast mixture.
- Add Flour: Gradually stir in the flour until a dough forms.
- Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
- First Rise: Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place until it doubles in size (about 1-2 hours).
- Shape Rolls: Punch down the dough and divide it into small pieces. Shape each piece into a ball.
- Refrigerate: Place the dough balls in a greased pan or baking dish. Cover tightly with plastic wrap and refrigerate for at least 2 hours, or up to overnight.
- Second Rise: When you’re ready to bake, remove the rolls from the refrigerator and let them sit at room temperature for about 30-60 minutes, or until they have puffed up.
- Bake: Preheat your oven to 350°F (175°C). Bake the rolls for about 15-20 minutes, until golden brown.
- Serve: Enjoy warm, brushed with butter if desired!
