Old Fashioned Seven-Minute Frosting”
Ingredients:
- 2 egg whites
- 1 1/2 cups granulated sugar
- 1/3 cup water
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Prepare Your Mixing Bowl:
- In a heatproof mixing bowl (like a glass bowl), combine the egg whites, sugar, and salt.
- Heat the Mixture:
- Place the bowl over a pot of simmering water (double boiler method) making sure the water doesn’t touch the bottom of the bowl.
- Whip the Mixture:
- Using an electric mixer, beat the mixture on high speed for about 7 minutes. You want the mixture to be thick, fluffy, and glossy, and the sugar to be completely dissolved.
- Add Flavoring:
- Remove the bowl from heat, add the vanilla extract, and continue to beat for an additional minute until well combined.
- Cool and Frost:
- Let the frosting cool slightly before spreading it on your cake or cupcakes. It can also be piped for decorative effects.
Tips:
- Taste Test: Make sure the sugar is fully dissolved before using; you can rub a bit between your fingers to check.
- Storage: The frosting is best used immediately but can be stored in an airtight container at room temperature for a short period or in the refrigerator for a longer time. Re-whip before use if it has settled.
