Smothered Style Pork Chops Recipe

Ingredients:

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth (or beef broth)
  • 1 cup heavy cream (or milk for a lighter version)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard (optional)
  • Fresh herbs (like thyme or parsley) for garnish

Instructions:

  1. Prepare the Pork Chops:
  • Season both sides of the pork chops with salt, pepper, garlic powder, and onion powder.
  1. Sear the Pork Chops:
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the pork chops and sear for about 4-5 minutes per side until they are browned. They do not have to be cooked all the way through at this point.
  • Remove the chops from the skillet and set aside.
  1. Cook the Onions:
  • In the same skillet, add the sliced onions and cook until they are softened, about 5 minutes. If using, add the minced garlic and cook for an additional minute.
  1. Make the Gravy:
  • Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits (this adds flavor).
  • Stir in the heavy cream, Worcestershire sauce, and Dijon mustard (if using). Bring the mixture to a gentle simmer.
  1. Smother the Pork Chops:
  • Return the pork chops to the skillet, nestling them into the gravy.
  • Reduce the heat to low, cover the skillet, and let everything simmer for about 15-20 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F/63°C) and tender.
  1. Serve:
  • Remove from heat and let it sit for a couple of minutes before serving.
  • Garnish with fresh herbs if desired. Serve the smothered pork chops with the gravy over mashed potatoes, rice, or your favorite side dish.

Tips:

  • You can add mushrooms or bell peppers along with the onions for extra flavor and texture.
  • For a spicier kick, consider adding some Cajun seasoning or a pinch of cayenne pepper when seasoning the pork chops.
  • Letting the pork chops rest for a minute after cooking will help retain their juices.
