Ingredients:
For the Chicken:
- 4-6 pieces of chicken (legs, thighs, breasts, or a mix)
- 1 cup of buttermilk (or milk mixed with 1 tablespoon of vinegar)
- Salt and pepper to taste
For the Batter:
- 1 cup of all-purpose flour
- 1/2 cup of cornmeal (this gives the chicken its signature texture)
- 1 teaspoon of baking powder
- 1 teaspoon of paprika (or to taste)
- 1/2 teaspoon of garlic powder (optional)
- 1/2 teaspoon of onion powder (optional)
- 1/2 teaspoon of black pepper
For Frying:
- Vegetable oil (or your preferred frying oil)
Instructions:
- Marinate the Chicken:
- In a large bowl, soak the chicken pieces in buttermilk, seasoning it generously with salt and pepper. Let it marinate in the refrigerator for at least 1 hour (or overnight for more flavor).
- Prepare the Batter:
- In a separate bowl, combine the flour, cornmeal, baking powder, paprika, garlic powder, onion powder, and black pepper. Whisk until well combined.
- Heat the Oil:
- In a deep skillet or fryer, heat about 1-2 inches of vegetable oil over medium heat (about 350°F or 175°C). You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle.
- Coat the Chicken:
- Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, coating it evenly. Shake off any excess flour.
- Fry the Chicken:
- Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry for about 8-12 minutes, turning occasionally, until the chicken is golden brown and cooked through. (Internal temperature should reach 165°F or 75°C).
- Drain and Serve:
- Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.
