Raspberry Yogurt Bars
Ingredients:
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar (or granulated sugar)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup yogurt (plain or vanilla)
- 1 cup fresh or frozen raspberries (thawed if frozen)
- 1 teaspoon vanilla extract
- 1/4 cup honey or maple syrup (optional, for extra sweetness)
Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal. - Prepare the Base:
In a large bowl, combine the all-purpose flour, rolled oats, brown sugar, baking powder, and salt. Mix well. - Add Wet Ingredients:
Pour in the melted butter, yogurt, and vanilla extract. Stir until everything is just combined. The mixture will be thick. - Fold in Raspberries:
Gently fold in the raspberries, taking care not to crush them too much. - Spread the Mixture:
Pour the batter into the prepared baking dish and spread it evenly. - Bake:
Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. - Cool and Slice:
Allow the bars to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. Once cool, slice into bars. - Serve:
