Raspberry Yogurt Bars

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar (or granulated sugar)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup yogurt (plain or vanilla)
  • 1 cup fresh or frozen raspberries (thawed if frozen)
  • 1 teaspoon vanilla extract
  • 1/4 cup honey or maple syrup (optional, for extra sweetness)

Instructions:

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. Prepare the Base:
In a large bowl, combine the all-purpose flour, rolled oats, brown sugar, baking powder, and salt. Mix well.
  3. Add Wet Ingredients:
Pour in the melted butter, yogurt, and vanilla extract. Stir until everything is just combined. The mixture will be thick.
  4. Fold in Raspberries:
Gently fold in the raspberries, taking care not to crush them too much.
  5. Spread the Mixture:
Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake:
Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  7. Cool and Slice:
Allow the bars to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. Once cool, slice into bars.
  8. Serve:
Enjoy your Raspberry Yogurt Bars as a snack or breakfast option!

Storage:

Store the bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.

Feel free to customize the recipe, such as adding nuts, seeds, or substituting with other berries. Enjoy!
