Banana & Walnut Cream Cake Recipe

Ingredients

For the Cake:

  • 1 ½ cups mashed ripe bananas (about 3 medium bananas)
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chopped walnuts (toasted for extra flavor)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (optional, for desired consistency)

For Garnish (optional):

  • Additional chopped walnuts
  • Sliced bananas

Instructions

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the toasted walnuts.
  • Divide the batter equally between the prepared cake pans and even the tops.

2. Bake the Cake:

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

3. Make the Cream Cheese Frosting:

  • In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar, mixing until fully incorporated.
  • Stir in the vanilla extract. If the frosting is too thick, add milk a little at a time until you reach the desired consistency.

4. Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate.
  • Spread a generous amount of cream cheese frosting on top of the first layer.
  • Place the second layer on top and frost the top and sides of the cake with the remaining frosting.

5. Garnish:

  • If desired, sprinkle additional chopped walnuts on top of the cake and decorate with banana slices.

6. Serve:

  • Slice the cake and enjoy! Store any leftovers in the refrigerator.
