Banana & Walnut Cream Cake Recipe
Ingredients
For the Cake:
- 1 ½ cups mashed ripe bananas (about 3 medium bananas)
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup chopped walnuts (toasted for extra flavor)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (optional, for desired consistency)
For Garnish (optional):
- Additional chopped walnuts
- Sliced bananas
Instructions
1. Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the toasted walnuts.
- Divide the batter equally between the prepared cake pans and even the tops.
2. Bake the Cake:
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
3. Make the Cream Cheese Frosting:
- In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, mixing until fully incorporated.
- Stir in the vanilla extract. If the frosting is too thick, add milk a little at a time until you reach the desired consistency.
4. Assemble the Cake:
- Once the cakes are completely cool, place one layer on a serving plate.
- Spread a generous amount of cream cheese frosting on top of the first layer.
- Place the second layer on top and frost the top and sides of the cake with the remaining frosting.
5. Garnish:
- If desired, sprinkle additional chopped walnuts on top of the cake and decorate with banana slices.
6. Serve:
- Slice the cake and enjoy! Store any leftovers in the refrigerator.
