Crock Pot Pepper Steak
Ingredients:
- 1.5 to 2 pounds beef flank steak or sirloin, sliced into thin strips
- 2 tablespoons olive oil
- 1 onion, sliced (yellow or red)
- 1 bell pepper (green, red, or yellow), sliced
- 2-3 cloves garlic, minced
- 1 cup beef broth
- 1 can (14.5 oz) diced tomatoes (optional, for added flavor)
- 2-3 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cornstarch (optional, for thickening)
- Salt and pepper to taste
- Cooked rice or noodles, for serving
- Green onions or fresh parsley for garnish (optional)
Instructions:
- Prepare the Beef:
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and sear until browned on all sides. This step is optional but adds a nice flavor.
- Transfer to Crock Pot:
- Place the browned beef into the crock pot. Add sliced onion, bell pepper, and minced garlic.
- Add Liquid Ingredients:
- Pour in the beef broth, diced tomatoes (if using), soy sauce, and Worcestershire sauce. Stir gently to combine everything.
- Season:
- Add salt and pepper to taste. You can also adjust the amount of soy sauce based on your preference for saltiness.
- Cook:
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- Thicken Sauce (Optional):
- If you want a thicker sauce, mix the cornstarch with a few tablespoons of water to form a slurry. Stir this into the pot about 30 minutes before serving and cook on high for an additional 30 minutes to thicken.
- Serve:
- Serve the pepper steak over cooked rice or noodles. Garnish with sliced green onions or fresh parsley, if desired.
Tips:
- Feel free to customize with additional vegetables like carrots, snap peas, or mushrooms.
- For a spicier kick, consider adding red pepper flakes or a dash of hot sauce.
Enjoy your delicious and hearty crock pot pepper steak!
