Crock Pot Pepper Steak

Ingredients:

  • 1.5 to 2 pounds beef flank steak or sirloin, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 onion, sliced (yellow or red)
  • 1 bell pepper (green, red, or yellow), sliced
  • 2-3 cloves garlic, minced
  • 1 cup beef broth
  • 1 can (14.5 oz) diced tomatoes (optional, for added flavor)
  • 2-3 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving
  • Green onions or fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Beef:
  • In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and sear until browned on all sides. This step is optional but adds a nice flavor.
  1. Transfer to Crock Pot:
  • Place the browned beef into the crock pot. Add sliced onion, bell pepper, and minced garlic.
  1. Add Liquid Ingredients:
  • Pour in the beef broth, diced tomatoes (if using), soy sauce, and Worcestershire sauce. Stir gently to combine everything.
  1. Season:
  • Add salt and pepper to taste. You can also adjust the amount of soy sauce based on your preference for saltiness.
  1. Cook:
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  1. Thicken Sauce (Optional):
  • If you want a thicker sauce, mix the cornstarch with a few tablespoons of water to form a slurry. Stir this into the pot about 30 minutes before serving and cook on high for an additional 30 minutes to thicken.
  1. Serve:
  • Serve the pepper steak over cooked rice or noodles. Garnish with sliced green onions or fresh parsley, if desired.

Tips:

  • Feel free to customize with additional vegetables like carrots, snap peas, or mushrooms.
  • For a spicier kick, consider adding red pepper flakes or a dash of hot sauce.
