Classic New York Cheesecake Recipe – Rich, Creamy & Irresistible
Ingredients
For the crust:
- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
For the filling:
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 tablespoon all-purpose flour (optional for added stability)
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust:
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove and set aside to cool.
- Make the filling:
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add sugar and vanilla extract, and mix until well combined.
- Add eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.
- Gently fold in the sour cream and flour (if using) until fully incorporated.
- Assemble and bake:
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Cool and chill:
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour. This helps prevent cracking.
- Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for the best flavor and texture.
- Serve:
- Carefully remove the cheesecake from the springform pan. Slice and serve plain or with your favorite toppings, such as fresh fruit, whipped cream, or a fruit compote.
