Classic New York Cheesecake Recipe – Rich, Creamy & Irresistible

Ingredients

For the crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted

For the filling:

  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour (optional for added stability)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Prepare the crust:
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove and set aside to cool.
  1. Make the filling:
  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add sugar and vanilla extract, and mix until well combined.
  • Add eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.
  • Gently fold in the sour cream and flour (if using) until fully incorporated.

  • Pour the cream cheese mixture over the cooled crust in the springform pan.
  • Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly.

  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour. This helps prevent cracking.
  • Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for the best flavor and texture.

  • Carefully remove the cheesecake from the springform pan. Slice and serve plain or with your favorite toppings, such as fresh fruit, whipped cream, or a fruit compote.
