Apple Fritters

Ingredients:

For the Fritters:

  • 2 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • Vegetable oil (for frying)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Apples:
  • In a bowl, toss the diced apples with a little cinnamon and sugar if desired, and set aside.
  1. Make the Batter:
  • In another bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, mix the milk, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples (and nuts if using).
  1. Heat the Oil:
  • In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  1. Fry the Fritters:
  • Drop spoonfuls of the batter into the hot oil, careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown.
  • Remove and drain on paper towels.
  1. Make the Glaze:
  • In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth. Adjust consistency as needed.
  1. Glaze the Fritters:
  • While the fritters are still warm, drizzle or dip them in the glaze.
  1. Serve:
