Burritos with Enchilada Sauce
Ingredients:
For the Burrito Filling:
- 1 pound ground beef (or ground turkey/chicken)
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning (or to taste)
- Salt and pepper, to taste
- 4 large flour tortillas
For the Enchilada Sauce:
- 1 can (15 oz) tomato sauce
- 1 cup vegetable or chicken broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Optional: a pinch of cayenne pepper for heat
Optional Toppings:
- Sour cream
- Chopped cilantro
- Sliced jalapeños
- Avocado
- Lime wedges
Instructions:
- Prepare the Enchilada Sauce:
- In a saucepan over medium heat, combine tomato sauce, broth, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Bring to a simmer and let cook for about 10-15 minutes, stirring occasionally. Adjust seasoning to taste. Set aside.
- Cook the Filling:
- In a skillet over medium heat, add a little oil and sauté the diced onion until translucent.
- Add the minced garlic and cook for an additional minute.
- Add the ground beef and cook until browned and fully cooked. Drain any excess fat.
- Stir in the taco seasoning, black beans, and cooked rice. Mix until well combined and heated through. Adjust seasoning with salt and pepper if needed.
- Assemble the Burritos:
- Lay a large flour tortilla on a flat surface. Place a generous scoop of the filling mixture in the center.
- Sprinkle some shredded cheese on top of the filling.
- Fold the sides of the tortilla over the filling, then roll it from the bottom up to enclose the filling securely. Repeat with remaining tortillas.
- Serve:
- Place the assembled burritos on a serving plate. Pour the enchilada sauce over the top, then sprinkle with remaining cheese.
- If desired, you can place the burritos in a baking dish, top with sauce and cheese, and bake at 350°F (175°C) for about 15 minutes until heated through and the cheese is melted.
- Garnish and Enjoy:
- Serve with your choice of toppings like sour cream, cilantro, jalapeños, or avocado. Enjoy your delicious burritos with sauce!
