Chocolate Pecan Turtle Clusters

Ingredients:

  • 2 cups pecan halves
  • 1 cup soft caramel candies (about 20-25 candies)
  • 2 tablespoons heavy cream (optional, for softer caramel)
  • 1 cup semisweet chocolate chips or melting chocolate
  • Sea salt (optional, for topping)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Toast Pecans: Spread the pecan halves on a baking sheet in a single layer. Toast in the preheated oven for about 8-10 minutes, or until fragrant and lightly browned. Stir halfway through to ensure even toasting. Remove from oven and let cool.
  3. Melt Caramels: In a microwave-safe bowl, combine the soft caramel candies and heavy cream (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth. Set aside to cool slightly.
  4. Form Clusters: On a wax paper-lined baking sheet, drop small mounds (about 1-2 teaspoons) of toasted pecans, pressing down slightly to form a base. Drizzle a bit of melted caramel over each mound of pecans.
  5. Melt Chocolate: In another microwave-safe bowl, melt the chocolate chips using the same method as the caramels—microwave in 30-second intervals, stirring in between until smooth.
  6. Cover with Chocolate: Spoon the melted chocolate over the caramel and pecan clusters, ensuring they are fully covered. Use a fork or a toothpick to swirl for a decorative effect if desired.
  7. Chill and Set: Sprinkle with a pinch of sea salt if using. Allow the chocolate to set at room temperature or place the baking sheet in the refrigerator for quicker setting (about 30 minutes).
  8. Serve: Once the chocolate has hardened, carefully remove the turtle clusters from the wax paper and serve.
